Spicy Eggplant with Caramelized Onions
2 medium or 1 large purple eggplant
2 large red onion sliced thin
6 Tablespoons grape seed oil
2 Cloves garlic chopped
1 Tablespoon Ground Coriander
1/2 Tsp Cumin powder
1/2 Tsp Cayenne
1/2 Tsp Turmeric
1 Tsp Hawaiian Salt (or other)
1 Tablespoons grated Ginger
10 small cherry tomatoes cut in fourths
Juice of 1 lemon
2/3 cup almond yogurtRoast whole eggplants on grill or gas flame till skin cracks. Place in oven @ 350 for 45 minutes. Cool peel and chop fine.
Heat oil and brown onions. Add garlic and ginger and fry 2 min longer. Add all spices fry on low heat for 2 min. Add eggplant and cook for 5 minutes mashing the eggplant with a fork. Just before serving add tomatoes, lemon and yogurt.
Enjoy with yogurt and alkaline bread.
